


On April 28 Bonefish Grill will have its grand opening in Boise. The restaurant is located in BoDo, at the corner of Ninth and Broad Streets, next door to Ha’ Penny.
Bonefish Grill considers itself the “fresh fish expert.” The company was founded in St. Petersburg, Fla., in January 2000 by veteran restaurant owners Tim Curci and Chris Parker.
The Bonefish Grill dining experience is dedicated to simplicity and consistency and committed to excellence.
Bonefish Grill specializes in serving market-fresh fish. Unlike too many upper-end restaurants, Bonefish Grill prides itself on serving entrees with full-sized portions that will leave patrons satisfied and pleased.
“The goal of the restaurant is to have great, fresh seafood. We have our fish delivered fresh everyday. The fish is hand-cut and dressed with a variety of fun toppings.
“We have everything from halibut to salmon and from exotic fish like mahi mahi to Hawaiian ahi tuna. We will also be carrying Idaho Trout.
“There are also daily specials with different species of fish with new toppings and more common fish like salmon with exotic toppings. The main thing we’re trying to do is have people experiment with new things,” John Aemmer, owner of Bonefish Grill, said.
For those uninterested in Bonefish Grill’s variety of fish, the restaurant offers a full menu including pasta dishes, steak, pork and a variety of appetizers, including the house specialty, Bang Bang Shrimp.
All entrees are served with hot, fresh bread and the choice of seasonal vegetables, pasta or a potato selection.
Bonefish Grill also offers a full bar, complete with martinis, specialty drinks and an extensive wine list to complement any meal.
While good restaurants are important in the fact that they need to serve fine food, Aemmer believes that it’s more important to help the community in any way possible.
Aemmer has already begun to take steps to benefit Boise’s community by having an auction for an eight-person dinner, with all proceeds going to Art for Life – Ballet Idaho.
The winner of the auction will receive a full course meal with cocktails, appetizers and entrees, paired with appropriate wines and dessert, to be enjoyed along with seven family members and friends.
“It’s the right thing to do. It’s being a good neighbor, so to speak,” Aemmer said.
Once in full swing, Bonefish Grill will be open for dinner from 3-10:30 p.m. Monday through Thursday, 3 – 11:30 p.m. Friday and Saturday, and from 2 – 10 p.m. on Sunday.
Lunch will be served from 11:30 a.m. to 3 p.m. Monday through Saturday.
Bonefish grill is available for reservations on a limited basis. The restaurant wants to keep a fairly casual walk-in basis and only allows for about 25 percent of the seating to be reserved.
